How to Choose Your Cake Size

When you are deciding on a cake size I recommend that you consider two main factors.
  1. How much cake do you need.
  2. What type of presentation do you want your cake to make.
Beautiful 8 Tier Tower with Black Satin RibbonIf you have always dreamed of an 8 tier tower, but have only invited 50 guests, obviously there will be left over cake. If your budget allows for it and it will fulfill a lifelong dream, go for it! However, if you are like 99% of the brides I have worked with you are probably looking for a cake that won’t leave enough leftovers to feed a small country. My advice to you is to take a look at how you want to integrate your cake into the celebration.

If you are having a sit down dinner for 250 and you are planning on serving the wedding cake for dessert you must have enough cake for 250.  If you are having an open house reception and are planning on 250 guests your needs may be different. Take the following into consideration:
  1. Are you planning to serve cake to all of your guests?
  2. When are you going to cut the cake?
  3. How many guests will be present when you cut your cake?
If you are planning on serving cake to the guests all during the reception there are two options.

The first choice is to cut the cake at the beginning of the reception and serve it throughout the reception. The drawback to this is that your guests will not get to see the cake intact. The presentation is no longer the elegant configuration of confection you have chosen. This lessens the impact or “wow” factor of your cake. The benefit of this choice is that you would have little if any waste. It is a shame to throw away cake!

The second option is to order a slightly smaller cake and leave it intact until the cake cutting ceremony. This usually takes place about 30 minutes before the end of the reception. Before the cake is cut, simply serve sheet cake the same flavor or flavors of your wedding cake. I feel that this is the best option because a large number of your guests will have an opportunity to view your cake.

This is probably going to be the most extravagant cake of your life and a lot of what you pay for is the in the completed design. To destroy this in the first few minutes, well, there is something about that that just doesn’t seem right! (Maybe it’s the hundreds of hours I put into decorating them!)

In order to determine how many people your cake will feed refer to the chart. My personal chart varies from the industry standard because I like a little more generous piece than a 1” by 2” piece of cake. I have also had the opportunity to cut a great many cakes and have found that it is tricky to cut exactly that size from a wedding cake. My chart has been created from my experience. You may get more or less depending on the size of piece that is cut.

Serving Guide

The square cake has more servings because it has corners. For other shapes the serving amount will also change. If you have another shape in mind, please ask.





Customizing your Cake Design

The design of your cake can be anything you want, so dream big! For weddings today I love that there are so many choices. You are no longer obligated to purchase a three tier white cake with pillars and lots of frilly design.


Fondant allows so much freedom in design that the personality of the bride and groom can come through. Think of words that would describe you as a couple and as individuals : whimsical, classic, bling, elegant, modern, simple, fabulous, timeless, charming, extravagant. You can use each of these words to describe cakes as well.
  • What type of ambiance do you want to create? Do you have a theme?
  • Are you using a symbol throughout the wedding? (polka dots, stripes, damask, swirls, hearts, butterflies the list can go on and on).

I encourage every client to put something special into the design. The design of your cake should be personal and special. When you look back at pictures in thirty years, will the memory tug at your heart and make you smile? It absolutely should!


Trombone Detail on the Cake Border I have had some fun and creative clients over the years. One couple met in Disneyland on a band tour so we used music notes and instruments on the border and hid Mickey Mouse ears on the cake. I had another couple where the groom was really into Star Wars. He had collected figures from the original film and kept them pristine in their boxes. His one desire for the wedding was that Princess Lea and Han Solo sit on top of the cake. This may not be for everyone, but was so perfect for this couple. It will always be one of my fondest memories because it truly expressed the personality of the couple.
